This tender, flavorful slow cooker pot roast is the ultimate comfort food. Let it simmer all day and come home to a hearty, delicious meal ready to serve.
Season the beef roast with salt and pepper on all sides.
In a skillet, heat olive oil over medium-high heat. Sear the roast on all sides until browned.
Place the onions, carrots, and potatoes in the bottom of the slow cooker.
Place the seared roast on top of the vegetables.
In a small bowl, mix beef broth, Worcestershire sauce, garlic, and thyme. Pour over the roast.
Cover and cook on low for 8 hours or until the meat is tender and falls apart easily.
Serve warm with vegetables and pan juices.
Notes
You can add other root vegetables like parsnips or turnips. For a thicker gravy, mix cornstarch with water and stir into the slow cooker during the last 30 minutes of cooking.
