Ingredients
  

Main Ingredients

  • 3 lb beef chuck roast
  • 2 tbsp olive oil
  • 1 onion sliced
  • 4 carrots cut into chunks
  • 4 potatoes quartered
  • 2 cups beef broth
  • 1 tbsp Worcestershire sauce
  • 3 garlic cloves minced
  • 1 tsp salt or to taste
  • 1/2 tsp black pepper or to taste
  • 1 tsp dried thyme

Instructions
 

  • Season the beef roast with salt and pepper on all sides.
  • In a skillet, heat olive oil over medium-high heat. Sear the roast on all sides until browned.
  • Place the onions, carrots, and potatoes in the bottom of the slow cooker.
  • Place the seared roast on top of the vegetables.
  • In a small bowl, mix beef broth, Worcestershire sauce, garlic, and thyme. Pour over the roast.
  • Cover and cook on low for 8 hours or until the meat is tender and falls apart easily.
  • Serve warm with vegetables and pan juices.

Notes

You can add other root vegetables like parsnips or turnips. For a thicker gravy, mix cornstarch with water and stir into the slow cooker during the last 30 minutes of cooking.
