Ingredients
  

Pancake Batter

  • 1 cup unsweetened almond milk
  • 1 egg
  • 1 cup oat flour
  • 1 tsp baking powder
  • 1/2 tsp vanilla extract
  • 1 tsp honey optional, or use a sugar substitute
  • 1 tsp coconut oil for cooking

Instructions
 

  • In a mixing bowl, whisk together almond milk, egg, vanilla, and honey (if using).
  • Stir in oat flour and baking powder until a smooth batter forms.
  • Heat a nonstick skillet over medium heat and lightly grease with coconut oil.
  • Pour 1/4 cup of batter per pancake into the skillet. Cook for 2–3 minutes, flip, and cook another 2 minutes or until golden brown.
  • Serve warm with fresh fruit or a drizzle of maple syrup, if desired.

Notes

These pancakes freeze well! Just reheat in the toaster or microwave. You can also add cinnamon or blueberries to the batter for variety.
