Pancake Batter

unsweetened almond milk

egg

cup
oat flour

baking powder

vanilla extract

honey
optional, or use a sugar substitute

coconut oil
for cooking
Instructions
In a mixing bowl, whisk together almond milk, egg, vanilla, and honey (if using).
Stir in oat flour and baking powder until a smooth batter forms.
Heat a nonstick skillet over medium heat and lightly grease with coconut oil.
Pour 1/4 cup of batter per pancake into the skillet. Cook for 2–3 minutes, flip, and cook another 2 minutes or until golden brown.
Serve warm with fresh fruit or a drizzle of maple syrup, if desired.
Notes
These pancakes freeze well! Just reheat in the toaster or microwave. You can also add cinnamon or blueberries to the batter for variety.
