Ingredients

Base Ingredients:

  • 1 cup cottage cheese full-fat or low-fat
  • 1/2 teaspoon salt adjust to taste

Savory Seasoning Options

  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • 1 teaspoon grated Parmesan cheese optional, for extra cheesiness

Sweet Seasoning Options:

  • 1/2 teaspoon cinnamon
  • 1 teaspoon stevia or coconut sugar
  • 1/2 teaspoon vanilla extract optional, for a sweeter taste

Instructions

Step 1: Preheat the Oven or Air Fryer

  • For oven: Preheat to 375°F (190°C) and line a baking sheet with parchment paper or a silicone mat.
  • For air fryer: Preheat to 350°F (175°C) and line the basket with parchment paper.

Step 2: Prepare the Cottage Cheese

  • Scoop 1-2 tablespoon portions of cottage cheese onto the lined baking sheet or air fryer basket.
  • Flatten each portion with the back of a spoon to create thin circles. (Even thickness = even baking!)

Step 3: Add Seasonings

  • Sprinkle your chosen seasonings evenly over the cottage cheese rounds.
  • For a savory flavor, use garlic powder, paprika, and Parmesan.
  • For a sweet option, use cinnamon, vanilla, and a sugar substitute.

Step 4: Bake or Air Fry Until Crispy

  • Oven method: Bake for 20-30 minutes, checking after 20 minutes. Chips should be golden brown and crisp at the edges.
  • Air fryer method: Cook for 10-15 minutes, shaking the basket halfway for even crispiness.

Step 5: Cool & Serve

  • Let the chips cool completely before peeling them off the parchment paper.
  • Serve immediately or store in an airtight container for up to 3 days.

Make-Ahead & Storage Instructions

  • Storage: Keep in an airtight container at room temperature for up to 3 days. Avoid refrigerating, as moisture can make them soggy.
  • Reheating: If they soften, re-crisp in an oven at 350°F for 5 minutes or in an air fryer for 2-3 minutes.

Notes

Use full-fat cottage cheese for crispier chips. Low-fat versions contain more moisture and may take longer to bake.
Flatten chips evenly to avoid uneven baking—thicker chips will be chewy rather than crispy.
For extra crispiness, leave the chips in the oven with the heat off for an extra 5 minutes after baking.
Want a cheesier taste? Sprinkle nutritional yeast or grated cheddar before baking.
Pair with dips like guacamole, salsa, or Greek yogurt for extra flavor.
