Fish Wrapped in Filo

A light, flaky filo pastry parcel filled with tender fish and flavorful herbs. Elegant enough for guests, easy enough for weeknights.

Ingredients
  

Filling

  • 2 white fish fillets such as cod or haddock, skinless and boneless
  • 1 tbsp lemon juice
  • 1 tsp Dijon mustard
  • 1 tbsp fresh dill chopped
  • 2 tbsp cream cheese

Pastry

  • 4 sheets filo pastry
  • 1 tbsp olive oil for brushing

Instructions
 

  • Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
  • In a bowl, mix lemon juice, Dijon mustard, dill, and cream cheese. Spread evenly over the fish fillets.
  • Lay out a sheet of filo, brush with olive oil, and layer with another sheet. Repeat until you have 2 stacks of 2 sheets each.
  • Place a fish fillet in the center of each stack. Fold and roll the filo around the fish to form a parcel. Brush the outside with more olive oil.
  • Place parcels on the baking sheet and bake for 20–25 minutes or until golden and crisp.

Notes

Try adding spinach or sautéed mushrooms with the filling for extra flavor. Serve with a side salad or roasted vegetables.
