Instructions
Melt butter over low heat in a saucepan until browned. Let cool slightly.
Whisk sugars into browned butter, then add egg and vanilla. Mix well.
Whisk together flour and baking soda separately. Fold dry ingredients into wet ingredients, then fold in chocolate chips.
Slice croissants in half horizontally. Fill with 2 tablespoons of cookie dough. Close the croissant gently.
Top croissants with another 2 tablespoons cookie dough and sprinkle more chocolate chips on top.
Preheat oven to 350°F (175°C). Arrange crookies on a baking sheet lined with parchment.
Bake for 10–12 minutes until golden brown and gooey inside. Garnish with sea salt if desired.
Notes
Best enjoyed warm. Use high-quality croissants for maximum flakiness. Adjust baking time slightly if you want them extra gooey (8–9 minutes).
