Instructions
Preheat oven to 225°F (110°C). Line a baking sheet with parchment paper.
In a clean, dry bowl, beat the egg whites with cream of tartar until soft peaks form.
Gradually add sugar, one tablespoon at a time, beating until stiff peaks form and mixture is glossy.
Beat in vanilla extract. Gently fold in mini chocolate chips.
Drop spoonfuls of the meringue mixture onto the prepared baking sheet.
Bake for 1½ hours. Turn off oven and let cookies sit inside for 30 minutes to dry out.
Notes
Store cookies in an airtight container. Avoid making meringues on humid days for best results.
