corned beef brisket

Instructions
Preheat oven to 325°F (165°C).
Place corned beef brisket in a Dutch oven. Sprinkle spice packet over the top.
Add beef broth, onion, garlic, mustard, bay leaves, and peppercorns. Liquid should mostly cover the meat.
Cover and braise in the oven for 2.5 to 3 hours, until tender.
If adding vegetables, place carrots and potatoes in the pot during the last hour of cooking. Add cabbage in the last 30 minutes.
Remove brisket, rest 10 minutes, slice against the grain and serve with vegetables.
Notes
This dish pairs perfectly with Dijon mustard or horseradish sauce. Leftovers make fantastic sandwiches!
