Ingredients
  

Main Ingredients

  • 3 lb corned beef brisket with spice packet
  • 4 cups beef broth
  • 1 onion sliced
  • 3 cloves garlic smashed
  • 1 tbsp whole grain mustard
  • 2 bay leaves
  • 1/2 tsp black peppercorns

Optional Vegetables

  • 4 carrots peeled and cut into chunks
  • 4 potatoes quartered
  • 1/2 head of cabbage cut into wedges

Instructions
 

  • Preheat oven to 325°F (165°C).
  • Place corned beef brisket in a Dutch oven. Sprinkle spice packet over the top.
  • Add beef broth, onion, garlic, mustard, bay leaves, and peppercorns. Liquid should mostly cover the meat.
  • Cover and braise in the oven for 2.5 to 3 hours, until tender.
  • If adding vegetables, place carrots and potatoes in the pot during the last hour of cooking. Add cabbage in the last 30 minutes.
  • Remove brisket, rest 10 minutes, slice against the grain and serve with vegetables.

Notes

This dish pairs perfectly with Dijon mustard or horseradish sauce. Leftovers make fantastic sandwiches!
